It’s getting cooler in the CSRA, so that means soup is on at my house. It’s our favorite comfort food and that is what we crave when the temperature starts to drop. Today, you can warm up with this egg roll soup!

This is a new recipe that we tried for ‘Egg Roll Soup’ from Gimme Some Oven.

I hardly ever follow a recipe the way it’s written so here’s how I made our Egg Roll Soup

A few simple ingredients

Cabbage, carrots, onions, garlic, ground pork, ground ginger, and sesame seed oil. I cut this recipe in half.

Brown the ground pork

Brown the ground pork and using a slotted spoon, transfer the meat to a plate.

Cook vegetables

Add oil to pot and sauté onions first. Then add carrots, garlic, ground ginger, and salt and pepper. Cook for 2 minutes.

Add cabbage, pork and chicken stock

Bring to a boil, then turn heat down to medium low, cover and simmer for 15 minutes or until cabbage is tender.

Stir in sesame oil

Add toppings

The recipe calls for wonton strips and green onion. I only had fried onions on hand and it was a nice addition to the soup.
