I Was Skeptical About These 3-Ingredient Peanut Butter Cookies, And Here’s How They Turned Out
My love of cooking has been majorly amped up since staying at home during the quarantine, and every day I’m scouring the internet for a new recipe to try.
This week, I came across this recipe for peanut butter cookies, and it only required three ingredients. Yes, three: one cup of peanut butter, one cup of sugar and one egg. No flour, no baking powder, no baking soda, nothing. I’m no master chef, but I’ve done enough baking to know that when it comes to cookies, most of the good ones at least have some flour.
Although very skeptical, I had all of the ingredients on hand, plenty of time and nothing to lose, so I decided to give ’em a try.
At this point, I was already a fan of this recipe because it doesn’t require you to dirty a lot of dishes. (Washing dishes is the root canal of household chores. I hate it!) I was able to mix everything in one bowl–and didn’t even need a hand mixer; you can just mix it all with a fork.
According to the recipe, you’re supposed to bake these for 6-8 minutes at 350 degrees. Maybe it was my oven, but they were still very raw after 6 minutes, so I doubled to 12 minutes.
Here’s where it started to go downhill, though…
When I took them out of the oven after 12 minutes, they LOOKED done, but they were super crumbly and not holding together. I assumed that I had just wasted a cup of peanut butter and fifteen minutes of my life. “THIS IS WHAT I GET FOR TRUSTING RECIPE WITH NO FLOUR,” I thought.
So, I chalked the cookies up as a lesson learned, left them on the stove and went about my business.
About a half hour later, I came back to find that once the cookies had cooled, they were PERFECT! They were slightly crunchy, but not dry; and kinda crumbly, but not falling apart when you took a bite.
So, I feel like I owe this recipe an apology. Not every recipe needs a ton of bells & whistles to make it taste good, and I stand corrected.

Ingredients:
1 cup of peanut butter (creamy or crunchy, whichever you prefer)
1 cup of white sugar
1 egg
Directions:
Preheat oven to 350 degrees. In a mixing bowl, stir the peanut butter, sugar and egg together until thoroughly combined. Grease a cookie sheet (or line with parchment paper), and use a spoon to scoop dough onto the cookie sheet. Bake for 10-12 minutes, remove from oven and let them cool completely before taking them off of the cookie sheet. They will keep for several days in a ziploc bag or airtight container.
BONUS HACK: Microwave them for about ten seconds and serve with a scoop of vanilla ice cream for a big ol’ bunch of YUM!
