Cash’s Quarantine Cookies
This is week number 4 for me working from home and Cash’s first week. We have purposely not bought any junk food because we both have no control. That being said, sometimes you just need something sweet. We’ve made Cash’s quarantine cookies a few times… and they are eaten faster than we’d like to admit.
Here’s the recipe… trust me when I say this, these cookies are AMAZING!
First of all, get yourself a trusty assistant. This is key!
Alright, let’s get started.
- 3/4 cups of light brown sugar
- 2/3 cup granulated sugar
- 1 cup of butter (melt it down a little bit)
- 2 teaspoons of vanilla
- 1 teaspoon of apple cider vinegar (I know it’s weird but just go with it. I promise you don’t taste it!)
- 1 large egg
- 2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- bag of chocolate chips
Mix the butter, sugars, vanilla, and apple cider vinegar together until it’s super smooth – spend a few minutes with it. Then beat in the egg.
Add in the dry ingredients just until it’s incorporated.
Throw in your chocolate chips. I’m a big fan of chocolate chip loaded cookies. Feel free to throw in more!
This next step is very important – put it in the fridge for at least two hours! I know it’s tempting to bake them right away, but I promise they are worth the wait!
Once your cookie dough is cold, bake them at 350 degrees for 8-10 minutes. I like to throw a few extra chocolate chips on the top!
When you pull them out of the oven, let them cool on the cookie sheet for at least 10 minutes!! Again, I know it’s tempting to gobble them up but let them cool properly on that hot cookie sheet.
